Simple Puff Pastry Tartlets

Puff Pastry is very versatile  in terms of what dishes you can make with it, here’s a simple, quick recipe to make delicious savoury puff pastry tartlets. We’ve themed this recipe to the Mediterranean region using fresh herbs, cheeses and vegetables. These can be eaten either hot or cold


Ingredients:
Puff pastry – home made or pre-made sheets
Fresh herbs & vegetables diced and sliced – courgette, tomato, red onion, sweet pepper, basil leaves
Crumbly cheese – use either a goats cheese for a stronger flavour or Greek Feta cheese
Use Tomato paste (with anchovies as a topping ingredient) or Pesto (without anchovies)


Method:
Simply spread a light base of either tomato paste (if you’re using anchovies as a topping) or pesto (if not) on a 10 cm square puff pastry base
Fold the edges of the puff pastry to form a lip on all sides, pinch together the corners
Add the chopped and sliced veg
Top with anchovies (tomato base version)
Top with small cubes of cheese (pesto base version)
Finish off with a few torn leaves of basil


Brush pastry with egg wash

Place on a baking tray and cook on a medium heat oven for approximately 15 minutes or until the pastry is a nice golden colour and the toppings cooked.

Serve with a nice light salad of leaves with a dressing of oil, vinegar and light mustard, and a little seasoning, pour a dribble of olive oil over the tartlet.
